Potatoes are a staple vegetable in many homes. In the recipe below, we use Yukon Gold potatoes to make an incredibly simple and delicious side dish. You can also eat them as a full meal all on their own. I love how simple this is to prepare; there is no need to peel or cut the potatoes. All you need to do is give them a wash.
This is truly one of my favorite potato recipes. I love the way the ham cooks slowly with the onions and garlic, building a robust flavor. Sometimes I'll even add a sprig of fresh rosemary. I suggest giving that a try if you want to add some earthiness to the recipe. Either way, have fun with this recipe, and serve the potatoes with cheese and sour cream if you're feeling like taking it to the next level!
Slow cooker whole potatoes

2 cups minced ham
1 onion, finely diced
5 cloves garlic, minced
2 tablespoons finely chopped fresh parsley
Juice of half a lemon
4-6 whole medium Yukon Gold or yellow potatoes, washed with skins on
3 tablespoons butter, softened
Salt and pepper to taste
In a 6-quart slow cooker, add everything from ham to lemon juice, then mix well.
Pat your potatoes dry after washing. Evenly slather each of them with the softened butter. Season each potato with salt and pepper to taste.
Place potatoes in the slow cooker on top of the ham mixture.
Cook on high for 3 hours. Adjust the time depending on how large or small your potatoes are.
Remove the potatoes from the slow cooker. Split in half, and spoon the ham mixture inside. Serve hot.
Pro tip: You can add cheese right at the end so it melts nice and gooey. Top it all off with sour cream and chives!
